      <image:caption>STEP 1: Pre-heat your oven to 180°C. Break down the cauliflower and broccoli into medium size florets, put into a baking tray and drizzle with olive oil, season with salt &amp; pepper and sprinkle across the paprika. Mix well so the seasoning, spices and oil are well combined. Place into the pre-heated oven and roast for 15-20 minutes until it starts to colour. STEP 2: Meanwhile, wash and slice your leeks. In a medium pan melt 30g of butter and add in your chopped thyme. Once the butter has melted and the thyme has started to flavour the oil, this should only take about 30seconds, add your leeks to sweat and soften.  STEP 3: To make the cheese sauce you need to start by making a roux. To do this, add 140g of butter to a large non-stick pan and melt. Once melted add 100g of plain flour and mix to create a paste. You want to cook this out for about 5 minutes, this will ensure you don't get a floury taste in your cheese sauce.</image:caption>

STEP 5: Allow the cheese to melt into the sauce, then add in the leeks and the roasted cauliflower and broccoli. Mix well into the cheese sauce so it is fully combined and transfer the mixture into a baking dish. Add a final sprinkle of cheddar on top and some paprika.       <image:caption>STEP 1: Pre- heat the oven to 220°C. Pat the skin dry with kitchen roll and score with a knife in criss cross. Season very generously with salt and make sure the salt is really in the gaps. Drizzle with a little bit of olive oil and really rub it. STEP 2: Place into the oven for  15 minutes at 220°C then turn down to 180°C and continue to cook for another hour.  STEP 3: After an hour in the oven take the meat out and tap the crackling with the back of a knife, if some areas are still slightly soft at this point carefully take the crackling off the meat using a knife by slicing through the fat between the meat and crackling. Then place the crackling directly on the oven bars with the pork underneath. This will allow the heat to penetrate underneath the skin and crisp up any areas that need it.  STEP 4: After another 15 minutes both the pork and the crackling should be perfect. The pork needs to reach 68°C and rest for at least 15 minutes and the crackling should almost sound hollow when you tap it. It will continue to firm up as it cools. TO SERVE: Slice the pork and break up the crackling.</image:caption>

      <image:caption>STEP 1: Peel your potatoes and cut then into 4 (or in half if they are smaller). You basically just want them to all be a similar size so they cook evenly. You can go slightly bigger or smaller depending on preference. Once peeled and chopped, you want to parboil them for about 8 - 14 minutes (dependent on size) by placing them into a large pan of salted boiling water.  STEP 2: Once the potatoes are cooked and the edges have begun to soften, drain them into a colander and leave to steam dry for about 5 minutes. After this, give the colander a little shake to rough up the edges of the potatoes, this will maximise the crispiness. STEP 3: Pre-heat your oven to 200°C. Put the butter and oil in your tray and place it in the pre-heated oven until the butter melts and starts to bubble. STEP 4: Carefully chuck the potatoes into the tray and season generously with salt &amp; pepper. Mix the potatoes so that the butter and oil fully coat them and spread evenly in the tray. Place them into the oven for about 20 minutes or until they just begin to start picking up a bit of colour.  STEP 5: After the potatoes have started picking up some colour, take them out of the oven and give them a shake and place back in for another 5-10 minutes. Take them out again after this and using a potato masher, or the back of a large spoon gently press the potatoes down to flatten and squish them slightly. This will increase the surface areas, meaning there is more space the get that potato as crispy as possible. Once pressed, chuck back in the oven. STEP 6: When the potatoes have really started to crisp up, (this should take about another 20 - 30 minutes after you pressed them)  bash up the bulb of garlic and add it to your tray of potatoes and return to the oven. If you add the garlic to early it will burn and go bitter. STEP 7: When you are happy with the level of crispness and colour on your roasties, add in your ripped up herbs and turn off the oven. Spread the herbs evenly across the potatoes and give the tray a good shake.  Let them sit in the oven for 10 minutes or so before serving so the herbs can infuse into the potatoes without burning and going bitter.  TO SERVE: Sneak a cheeky potato to ensure you are happy with the seasoning, add more salt before serving if needed.</image:caption>
